So this dish seemed to make people go batshit cray-cray on my Facebook and Instagram. Guys, it’s just smoked salmon with rice and goat’s cheese inside. Seriously. It’s so easy. And I only made it because by the time I got to the end of the whole smoked salmon I was slicing for my smoked salmon and pesto cream pasta dish, I actually got better and sliced a few decent pieces! SUCCESS! So what to do? I was out of tortilla wraps so rotollos were out of the question… What’s even better than that? Smoked salmon “sushi”!!!
This is going to be another short post because there really is no recipe for this… Sorry! It’s just one of those “get your ingredients and assemble” appetizers. This would be an excellent party pleaser or canape if you host dinner parties. Or even quick snack before or after a work out. And it kind of looks impressive for doing almost no work at all.
Feel free to change up the cheese, rice filling, and make it your own.
Smoked salmon “sushi”
What you’ll need:
– 10 pieces smoked salmon, sliced
– 1 1/2 tbsp goat’s cheese
– 1/3 cup brown rice salad
What you’ll need to do:
1. Spread goat’s cheese onto smoked salmon.
2. Spoon the rice filling by the teaspoonful onto one end of the salmon.
3. On the filling end, roll the salmon up.
4. Serve on its own! Makes 10 pieces of “sushi”.
