The BEST Vietnamese salad roll, ever.

Raw enoki mushroom and avocado salad rollsI absolutely LOVE Vietnamese salad rolls. Whether it is the traditional one with shrimp, minced pork, Vietnamese ham, or whatever, they are one of my favourite ways to eat a salad because who has the time to sit down and eat nowadays?! They are great for an on-the-go lunch or snack and are even more delicious with a few dabs of Sriracha and hoisin sauce. Mm….

Lately I have been finding myself skipping the rice noodles traditionally found encased inside the roll as a lighter and healthier way to eat my rolls. I usually throw more lettuce or greens in there but sometimes, I do miss those carb-y noodles. I hadn’t ever found a suitable substitute those noodles…UNTIL NOW.

Party pleasers.

Mini chive and bacon quicheWe had another family BBQ over this past weekend as my brother and sister-in-law and my super cute nephew were in town. Of course, a family party was in order. Smoked salmon “sushi”!!!

Smoked salmon sushiSo this dish seemed to make people go batshit cray-cray on my Facebook and Instagram. Guys, it’s just smoked salmon with rice and goat’s cheese inside. Seriously. It’s so easy. And I only made it because by the time I got to the end of the whole smoked salmon I was slicing for my smoked salmon and pesto cream pasta dish, I actually got better and sliced a few decent pieces! SUCCESS! So what to do? I was out of tortilla wraps so rotollos were out of the question… What’s even better than that? Smoked salmon “sushi”!!!
